You’ll need to cook the fish and add a little salt and pepper.
Ingredients for one fish fry: 1 pound chicken breast or chicken thighs, skin-side down, skin on 3 cups chopped spinach, finely chopped 1 large red onion, finely diced 1 cup diced tomatoes 1/2 cup chopped green onions 2 teaspoons dried oregano 1/4 teaspoon salt 1 teaspoon pepper 1/8 teaspoon black pepper 2 cups of flour 1/3 cup white flour, plus more for dusting Directions: For the fish: In a medium pot, cook the chicken breast, skin side down, for about 15 minutes.
Remove the skin and cut the chicken into small pieces.
Drain the chicken and add the spinach, red onion and tomatoes.
Add the oreganone, salt and the pepper.
Stir in the flour and cook for another 2 minutes.
Add in the water and stir until the mixture is completely incorporated.
Let the mixture rest for 10 minutes before adding in the pasta and serving with the fish.
Notes For the salad: In the same pot, add the chopped spinach and the red onion to the pasta.
Add some salt and a pinch of pepper to taste.
Drizzle with olive oil and sprinkle with salt.
